Ginger Carrot Soup
Pacifies Vata - Pitta - Kapha

Ingredients for 2

2 small potatoes
-
3 carrots
-
1/2 Tsp | Turmeric powder
-
1 Garlic clove
-
1 shallot or small red onion
-
1 piece of Ginger
-
1 Tsp of coconut oil (for cooking)

Instructions
-
Peell the carrots and potatoes
-
Rinse the vegetables
-
Slices in small pieces and put in a large sauce pan
-
Cover with water
-
Let it boil and cook for about 20 minutes until vegetables are soft
-
On the side, slice the ginger, the shallot or onion and garlic
-
Add the coconut oil in the pan, let it melt before adding the thinly sliced ginger, shallot, garlic
-
Let it cook slowly until golden brown
-
Once the vegetables are soft, remove from the stove
-
Mix the vegetables with the remaining water. Add more water if the soup it too thick for your taste
-
Serve the soup hot, add the cooked ginger, shallot and garlic on top
-
Add a few drops of olive oil, turmeric powder, pinch of salt and back pepper
-
Garnish with coriander or parsley if you wish
